This cocktail is inspired by the peach cobblers my mother made every summer when I was growing up. My father had several peach trees, and when the fruit was ripe, we would pick the peaches and my mom would turn them into cobbler. Served warm with Blue Bell Homemade Vanilla Ice Cream, it was the dessert of summers in Texas.

This drink plays up those same flavors. Tequila añejo gives those oak-aged, caramel-like notes that I love with ripe peaches, while the brûléed peach garnish adds another layer of browned sugar and caramelized fruit. Fresh lemon juice keeps the drink bright, and agave syrup or honey sweetenes the peaches without overpowering their flavor. Together, these flavors take me back to my parent’s house, our peach trees, and the cobblers we ate every summer.
