This is my standard recipe for agua fresca and it is incredibly versatile. You can start with this recipe for almost any fruit or vegetable you want to use.
The main things you’ll need to adjust are the sugar and lime juice, because it really depends on what fruit you’re using. If you’re using raspberries, for example, you’ll probably need a little more sugar. If you’re using ripe, in-season mangoes, they might already be very sweet, and maybe you don’t want any added sugar at all.
You can also balance the flavor with lemon or lime juice. If your fruit is really sweet and doesn’t have a lot of nuance, a little tart edge will enhance the flavor, make it more complex, and keep the drink from tasting like a flatline sweet drink.
